Chop up all your favorite vegetables to create a large family sized salad. Here I used the following:
2 romaine hearts, chopped
1/2 cucumber, sliced
1 yellow bell pepper, chopped
1/2 can black olives
1 avocado, diced
1/2 pint grape tomatoes, sliced
1/4 cup feta cheese
2 boneless, skinless chicken breasts, marinated in my favorite salad dressing, grilled and sliced
1 package tempeh, marinated in salad dressing, sliced and sautéed over medium heat
You can even keep the salad toppings separate like a salad bar if that helps your kids choose what they like. This allows you to measure out the serving in your containers if you like too.
Serve with sprouted wheat rolls or baked potatoes.
21 Day Fix (Depending on how much you take) = 3 green, 1 red, 1 blue, 1 yellow (with bread or potato)
